A gathering place where friends with different cultures from all walks of life can meet and celebrate life with food as the dough that binds them together.

Halloumi and Chilli Snack

2 tablespoons fufs of chopped, de-seeded fresh red chillies
60ml extra virgin olive oil
500g of Halloumi sliced
Juice of a ¼ lemon

Mix the chilli and olive oil in a small bowl and leave to stand.
Fry the cheese slices without oil in a non-stick pan for about 2 minutes a side until golden brown.
Put cheese onto a platter and drizzle the chilli oil mixture over it, finishing it off with a dash of lemon juice.

This is great with a good ciabatta or flat bread before a braai.

Brie with roasted walnuts and Pears

This is a great way to serve Brie, either as a after dinner treat or as a starter.

1 wheel of Brie cheese
4 pears cored and cut into wedges
70ml balsamic vinegar
30ml brown sugar
Salt and black pepper to season
100g walnuts roasted
Fresh mint leave to garnish

Pre-heat oven to 200C. Place the pears on a roasting tin and sprinkle with balsamic vinegar, salt, sugar and pepper. Roast them in the oven for 15 – 20 minutes or until soft and brown around the edges. Place the Brie onto a serving platter, top with warm pears, drizzle with balsamic vinegar syrup from roasting tin and finish off with roasted walnuts and mint leaves.

Brie, excellent with sweet figs and biscuits after dinner.
Camembert, try it melted in the oven with baby potatoes.
Swiss Gruyere, this one is not to be beaten in a cheese fondue.
Emmental, just on its own with a good wine.
Gorgonzola, use as one of three cheeses on a pizza or in pasta.
Pecorino is a must with sundried tomatoes on a good bread.
Danish Blue goes well in pasta for a very creamy and tasty sauce.
Grana Padano, otherwise known as Parmesan, shaved onto a smoked chicken and green leaf salad with heaps of olive oil.
